Recipe Thursday: No-Bake Energy Bites
I originally found this recipe on Pinterest (Follow me Here) and to my pleasant surprise it is wonderful! I hope you enjoy them as much as I do! Ingredients: 1 cup (dry) oatmeal- I used old-fashioned oats 2/3 cup toasted coconut flakes- Toasting optional! 1/2 cup peanut butter- I use half peanut and half almond butter 1/2 cup ground flax seed or wheat germ- I use whole flax seeds 1/2 cup chocolate chips or dried fruit (optional) 1/3 cup honey 1 tsp. vanilla Mix all ingredients in a large bowl. FOOD FAIRY’s SUNFLOWER SEED PATE (gluten free) Yield: 2 small loaves 1 cup raw sunflower seeds 1 onion, peeled & coarsely chopped 1 large russet potato, peeled and coarsely chopped into 1 inch or smaller pieces ¼ cup tamari or soy sauce ½ cup olive oil ½ cup nutritional yeast flakes ½ cup rice flour 1-2 cloves garlic OR ¼ teaspoon garlic granules 1 – 1 ½ teaspoons dried herbs—sage, basil, oregano or Marjoram, herbs de province (my favorite) Preheat oven to 350°. Place seeds in a food processor and process until lightly ground. Add onion and potato pieces and pulse to combine and chop together. Add all remaining ingredients and puree until very smooth. This weeks recipe is a healthy take on the traditional chocolate cake utilizing zucchini instead of oil and incorporating other healthy ingredients. Recipe courtesy of Nanette Hrenko. Zucchini Cake Chocolate mix (dark chocolate cake mix) (option: 1 teaspoon coffee grounds) 1 egg 2 egg whites 1/4 cup sour cream or yogurt 1/4 cup applebutter or applesauce 2 teasp cinnamon 2 cups finely shredded zucchini Use paper towels to drain the liquid from the zucchini Mix all together by hand Pour into greased bundt pan Bake for 50 minutes at 350/check with toothpick at 40 minutes (ovens vary) Optional Topping: 1/2 cup peanut or almond butter 1/2 stick butter (melted) 1/4 cup cream Combine and drizzle over cake Image:...
